Yellowtail by Chef Akira Back @ Bellagio in Vegas Experience

Another Vegas trip with the crew! We tried new spots this time around and didn’t revisit any spots we’ve been to in the past. I flew in on a Sunday, and we had tickets to see Absinthe (pretty damn great fucking show, just don’t get offended) at 8PM, so we decided to try Yellowtail before the show. 

Setting and Such

Yellowtail at the Bellagio might not look like much from the casino, but once you’re in, it’s wow. There is an outdoor seating area in the back with view of the Bellagio fountains and the water show goes on every 30 mins or so. We didn’t get outdoor seating, but we were seated indoors with a view of the outdoors, so that was really nice. 

Girl Math?

There were many items we’d want to try, some more than others. The omakase is at a fair price at $175 a person for some solid options. We wanted some other stuff on the menu, so we thought if we ordered a la carte and kept it under $175 a person on the food, we’re good! Drink pairing with the omakase is $60 a person, so we already saved money by just ordering a cocktail each!

Cocktails - Japanese Manhattan (Toki Japanese whiskey, sweet vermouth, Akira Back sake, orgeat, angostura bitters), Lychee (vodka, Ty-Ku, lychee purée), and Infusion (pineapple and vanilla infused sake, rum).

Great start to our first night in Vegas! The cocktails were good and I really enjoyed my lychee martini. Not overly sweet and it was just delicious. Let’s move onto the food! Thoughts in the captions. 

Angry Yellowtail - with micro cilantro and blood orange sauce. Gotta order some yellowtail at a place called Yellowtail! Raw yellowtail is so good. Good texture, that bit of fattiness, flavor, etc. Not to fond of the orange, but the dish itself was pretty good.
Salmon Tiradito - with charred peaches and cilantro oil. The salmon was good and I enjoyed the peaches. It was a bit hard for to get it all in one bite so we ended up eating some of the peach bits separately. They do go well together!
Mile High Roll - crab mix, avocado, asparagus, tempura fried topped with mixed sashimi and spicy ponzu aioli. We all really enjoyed this roll! Basic-ish base, but the sashimi topping elevated this roll by a LOT. My friends said this is now their favorite all time roll!
Akira Back Tuna Pizza - with micro shiso and truffle oil. You can really taste the truffle oil on this pizza, and luckily it wasn’t too overpowering. There were other garnishes on this one and it was all really good. One of my fave tuna pizzas in Vegas so far!
Toro Caviar - with Kochujang micro greens. An issue we had with this dish was that there were 3 of us and 4 pieces. We played rock papers scissors and winner got a second piece. Great toro and caviar. Hit or miss with the greens inside it. I really loved the fish and such, but not too fond of the greens. YUM!!!
4 oz of Kagoshima A5 Wagyu - there was a traditional style and also this style with the hot stone, sauce, mushrooms and more with it. Something new. We all thought it was super great, especially with how tender the Wagyu was and the mushrooms added a lot to the dish. We also got some potatoes and the sauce and shrooms went well on that!
Potato purée! Not as rich as Bazaar Meat and Gordon Ramsay’s potatoes, but still good. The sauce from our Wagyu order elevated these potatoes. Delicious and comforting.

Food Overview

The 3 of us enjoyed the food a lot. It was family style and most dishes somehow had divisible by 3 pieces, notably the raw fish/sashimi dishes. The items tasted really fresh, and if money wasn’t a factor for us, we’d get more toro caviars and a lot more Wagyu! Now let’s go for some dessert!

Dessert menu
Our dessert - Black & White Sesame Matcha Cake - white sesame and matcha mousse, salted agave ice cream. Not too sweet! The ice cream was amazing - smooth, subtle flavor, etc. The cake was good too, but didn’t get much matcha flavor IMO. Texturally it was alright. I def enjoyed the food a lot more than the dessert.
